As a mom, I want my child to eat home-cooked, wholesome meals, even in school. No matter what, I don’t give my son any packaged snacks or biscuits in his tiffin box. Every morning, I wake up to the question, “Aaj tiffin mein kya banau?” and I know your story is no different from mine. If you are a mom, you know the struggle of making meals for tiffin that not only appeal to the eyes of your little one but also satisfy his taste buds. These children are so difficult to please nowadays!
Over time, I’ve learned that sandwiches are a total lifesaver. They’re super easy to make and can be customized in countless ways. One of my son’s all-time favorites is the chicken mayonnaise sandwich. It is creamy, flavorful, and super easy to prepare! In fact, not just my kids but my husband and I also enjoy eating this sandwich. Here’s how you can make a Chicken Mayo Sandwich that is sure to bring back an empty tiffin box for your children.
Chicken Mayo Sandwich Recipe:
Ingredients:
- Sandwich bread (as needed)
- 200g boneless chicken
- ½ tsp ginger-garlic paste
- ¼ tsp sugar
- Salt & pepper to taste
- Mayonnaise (as needed)
- Cheese sauce (optional, as needed)
- Mixed veggies (corn, cabbage, carrot, capsicum—about a medium bowl full)
- Optional: Chili flakes & Italian seasoning
(Note: I haven’t specified exact quantities for some ingredients because you can adjust them to your taste.)
How to Make:
- Boil the chicken, green peas, and corn with ginger-garlic paste, salt, and pepper. Once cooked, let it cool and drain the stock. (Don’t forget to save the stock for soup later!)
- Finely chop the capsicum and cabbage, and grate the carrot.
- Shred the boiled chicken into a large mixing bowl. Add in green peas and corn, along with all the chopped veggies.
- Add mayonnaise and cheese sauce. If you don’t have cheese sauce, you can use cheese spread too or skip it completely. I like the cheesy flavor, so I add it.
- Season with salt, sugar, and pepper. Mix everything together well.
- Take a slice of bread, spread the mayo chicken mixture on it, and top it with another slice.
- Repeat for all sandwiches, then cut them into triangles. Serve with some homemade tomato ketchup.
Variations:
- Spread butter and green chutney on the bread before assembling for that extra flavor.
- Add a cheese slice to make it more cheesy.
- For a healthier twist, use whole grain bread (store-bought or homemade) and homemade mayonnaise. Skip the cheese sauce, or you may add paneer if you want.
